I really love having healthy muffins on hand for snacks- I just keep them in the freezer and then heat them up whenever I need a little boost. It’s Wonderful Wednesday! I’m feeling tired and I wanted a quick but yummy dinner. I once made a teriyaki quinoa dish from Dreena Burton’s “Eat, Drink, Be Vegan”.
