Samosa Potatoes with Mango Chutney

These potatoes taste exactly like a samosa. I’m not a huge potato eater (yams on the otherhand, I adore!) but I really did enjoy these, and it was great to not have to worry about making a dough like you would for a samosa. Same great flavour, though!

Vegan Dolmades

I really wanted to try making a dish that I haven’t made before…in fact, I have never even liked dolmades- until I made these! I chose to make a completely vegan version and I was really happy with the results. Dolmades are basically a rice mixture (sometimes with ground meat, or vegetables) wrapped in grape leaves. Guys, I love sushi. I could eat Japanese food every day for the rest of my life and never get bored. I’m super excited about my garden this year because I was given EDAMAME seeds to plant! Cumin- Carrot Salad

If you can remember back to this post, I made a meal inspired from the Middle East. This particular dish is a cumin- carrot salad. I used organic carrots and they were so fresh and sweet, it added an entire element of flavour compared to regular carrots. Yum! For those of you that don’t know, cumin is an extremely healthy spice. A Middle Eastern Meal

Earlier in the week, in one of my culinary classes, we were all asked to bring in a dish that represents comfort food for us. Mexican Quinoa Salad

When I went to Mexico, one of my favourite meals was at a Mexican restaurant in the resort. There was a great salad bar and one of my favourite salads was a corn salad. Happy New Year!

Happy New Year everyone! Between work, nurition school, and culinary school, 2009 just flew by! I hope 2010 is a great year for everyone and I’m very excited for it. As you guys probably know, the 2010 Olympics are being held in Vancouver/Whistler, so I am thrilled at the thought of spending a couple weeks in this BUSY city during that time. Miso Soup

Miso soup is so easy to make and it’s absolutely delicious. I love the salty miso and seaweed with the neutral, creamy tofu. I threw this together for lunch one day and there are so many different add-ins you can use. Why not try crab meat instead of tofu? Or use some soba noodles to make it a bit heartier. Try using different kinds of miso for slightly different flavour combinations, as well!

Vichyssoise and Pumpkin Hummus

As you may know, I’m unable to taste many things in my culinary school due to meat stocks or meat itself being used in the cooking process.
