Day One- Vegetarian in Culinary School.

Well, it’s been an extremely busy day today. I woke up at 4am and made it to the school by 6 45am. After a few minutes of running around like a chicken with my head cut off, I had my schedule and was on my way to find my class. Luckily, there were a couple familiar faces in that class! I took a previous teacher’s advice of avoiding the front row with my particular chef….who tends to spit a bit when he talks. We spent some time listening to his experience as a chef and then we spent a large chunk of time introducing us students. This was a time to figure out a bit about eachother- who had experience in the kitchen, who really wanted to learn, and who picked culinary school for reasons other than passion. I fell into the group that ‘really wanted to be there to learn’. I am so excited to learn everything I can about the food industry and cooking and baking, and our chef instructors have a ton of experience. I did discover that as I expected, I am the only vegetarian and clearly the only person that has ever been a vegetarian (when everyone answered the question ‘what is your favourite cuisine?’, 85% of people said ‘meat.’). I rushed around all afternoon after class buying school supplies and organizing everything for tomorrow, as well as attending to a biiiiiig pile of reading! I made some time to go to the gym with my boyfriend and even caught a glimpse of the Canucks game!

I can’t wait to start cooking tomorrow, where we will be preparing a few kinds of veal and chicken stocks! Even though I won’t be able to taste them, I know it will be a great learning experience and a very important fundamental.
