Drop Dead Recipes- Sweet Potato Fries & Chipotle Mayo

I’m so stoked to be able to tell you all that I’ve paired up with my favourite clothing company, Drop Dead Clothing,  to provide their new blog with vegetarian & vegan recipes. I really love this brand, I think I’ve bought just about every piece of clothing they’ve come out with (and so has my boyfriend!). I kicked things off with deliciously addictive sweet potato fries with chipotle mayo. Definitely vegetarian and easily veganized by use of vegan mayo, which I used!

Sweet Potato Fries with Chipotle Mayo

Everyone loves sweet potato fries (or yam fries). I know because Google told me so.  They are eaten all over the world, although sometimes referred to under different names. They are healthier than regular potato fries, and I think even tastier.

This particular recipe is made even healthier because the fries are baked instead of deep-fried….but I swear they are just as good! Especially when paired with this amazing homemade chipotle mayo. It’s has a punch of chipotle flavor but it’s mellowed down with sweet orange marmalade and fresh chopped cilantro. I used a store-bought vegan mayo, which is made without eggs, but regular mayo will be perfect, as well. These sweet potato fries makes a great appetizer or side dish but if you’re like me and you want to eat the whole tray at once, I’m sure it’s a great main course, too- hah! This simple recipe will blow your mind and you’ll love these fries as much as the ones you get in restaurants…maybe more!

  • 2 medium orange fleshed sweet potatoes
  • 1 tbsp olive oil
  • ½  tsp paprika powder
  • ¼ tsp sea salt

 

  • ½ cup mayonnaise ( I used vegan Vegenaise)
  • ¼ – ½ tsp chipotle chili powder (start with ¼ tsp and taste. Chipotle can be quite strong, add a bit more if you need to)
  • ½ tsp garlic powder
  • 1 tbsp orange marmalade
  • 1 tbsp fresh cilantro, roughly chopped

Preheat your oven to 425 degrees F/ 220 degrees C/ gas mark 7. Slice your sweet potatoes into thin fries. Toss with olive oil and paprika until coated. Spread into a single layer on a baking sheet tray. Bake for 20 minutes, flip fries over after 10 minutes.

While fries are baking, stir together mayonnaise, chipotle powder, garlic powder and orange marmalade until well blended. Top with cilantro. Enjoy!
