My last post was about a great restaurant I went to called Nuba. You can read about that here. I mentioned the delicious cauliflower called “Najib’s Special” that was served with “La Feast” that I ordered. I knew once I tried it that I had to recreate it at home, and I must say that my version is tasty and much healthier, as it is roasted in just a bit of oil, instead of deep-fried. The lemon flavour is strong, but that’s exactly how it was at Nuba- yum!

Once again, go to Nuba and try Najib’s Special out for yourself- this is just my take on it! 🙂

Also…if you are wondering why my cauliflower looks green it’s because I used a “broccoflower”, a green cauliflower!

 

Lemony Roasted Cauliflower

Cauliflower roasted until crisp and full of lemon flavour.
Prep Time: 5 minutesCook time: 30 minutesRating: stars – based on review(s)
Ingredients:
Head of cauliflower – 1
Olive oil – ~1 tbsp
Sea salt – heavy pinch of
Black pepper – pinch of
Lemon – juice of 1/2
Instructions:
Preheat the oven to 400 degrees F. Slice up cauliflower into small 1/2 ” flat pieces, rather than small florets. Place on a baking tray and drizzle with olive oil, salt, and pepper. Roast in oven for 30 minutes, turning after 10-15, until browned and some pieces are quite crisp. With about 5 minutes left, remove from oven and add lemon juice. Place in oven for remaining 5 minutes. Enjoy!

    Love the lemon flavor and slicing the cauliflower helps it roast evenly. So simple, and so delicious.
