This month, on One Green Planet, I’m sharing one of my favourite salad recipes. It’s my take on a salad I have had a few times at one of my favourite Vancouver vegetarian restaurants. It’s base is mixed greens, with steamed broccoli and warm chickpeas. The tofu is seared on the outside, heating it up and giving it a nice crust, and the sesame dressing is served warm, too. Between the chickpeas, the tahini in the dressing, and the tofu, this is one hearty and filling salad! I hope you give it a try.
