The Simpsons Donuts

This month’s recipe for Drop Dead Clothing has been released and I’m so excited about it. In case you didn’t know, Drop Dead Clothing has recently released a new collection, and it happens to be an Itchy & Scratchy collaboration. I may not be the hugest Simpsons fan in the world, but I can appreciate greatness when I see it, and this is awesome! I can’t wait to get my hands on some of these items! 

To go along with the new collection, I had to make something Simpsons themed. Of course, the first thing that came to mind was Homer Simpson’s favourite donut. I searched high and low, all over Auckland for a donut pan…could I find one? Nope. Thankfully I have wonderful parents that were willing to buy me one from Canada (where they are everywhere) and ship it to New Zealand. If you can’t go through all that trouble, these can easily be made in muffin tins, just bake them longer, until a toothpick inserted into the centre comes out clean.

 

 

“The Simpsons” Donuts

Donuts just like Homer's…but vegan!

Ingredients
Donuts
  • 1 “flax egg”- Mix 1 Tbsp ground flaxseeds with 3 Tbsp water and let sit 5 minutes until thickened and jelly-like
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp nutmeg
  • pinch of sea salt
  • 1/3 cup sugar
  • ¼ cup almond milk
  • ¼ cup unsweetened applesauce
  • 2 Tbsp melted coconut oil
Icing
  • 2 cups icing sugar
  • 1 tsp vanilla
  • red/pink food colouring*
  • ¼ cup almond milk
  • sprinkles
Instructions

  1. Prepare flax egg. Preheat oven to 350 degrees C/ 175 degrees F/ Gas Mark 4. Grease your donut pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, nutmeg and salt.
  3. In a separate bowl, whisk together sugar, almond milk, applesauce, coconut oil, and flax egg.
  4. Add wet ingredients to dry ingredients and whisk together just until combined—do not overmix.
  5. Fill a Ziploc bag with the batter. I like to set the bag in a cup, it makes it easier to fill.
  6. Cut one of the corners off- – just a small hole will do, to pipe the batter into the pan.
  7. Fill the donut molds about 2/3 of the way full.
  8. Bake for 10 minutes, and let cool in pan for a couple of minutes, and then remove to a cooling rack.
Icing
  1. *If using food colouring and you want these to be vegan, be sure to buy one labeled as vegan, as lots of food colourings are not vegan. Add a drop at a time until you reach a nice Simpson pink. A little goes a long way with food dyes.

  2. Sift icing sugar into a large bowl.
  3. Whisk in almond milk, vanilla, and food colouring.
  4. To create a lasting glaze, gently heat the icing in a pot, stirring often. Dip the donuts in, let excess icing drip off. Once you have dipped the entire batch, repeat, for a solid double glaze. Be sure to heat the icing, or the glaze will liquefy and melt right off the donuts within a couple hours. Top the donuts with sprinkles and enjoy!
