Holiday Baking- Vegan Pecan Pie

I’ll be the first to admit that by no means is this a “healthy” dessert. It contains a ton of sugar, but I wanted to make a pecan pie that didn’t contain a ton of butter, or any corn syrup. Unfortunately for my mom and I, pecan pie is probably our favourite pie!

I got the recipe here and I kept it about the same, except I substituted almond milk for the soy milk. I also drizzle a layer of dark dark chocolate over the crust and then again over the top. I enjoyed this pie very much, but I think I would change the crust a bit. It was just slightly to grainy for me. I think they addition of some whole grain flour or even cocoa powder, would be beneficial to the texture, instead of the cornmeal.

I have been trying to refrain from doing a lot of Christmas baking this year, as I’m in the process of becoming a Registered Holistic Nutritionist and I should follow my own advice. But let me tell you….IT IS SO HARD! I absolutely love baking at Christmas time, but there are only so many people I can pawn my baked goods off to! So this was really a chance for me to bake a little something that is slightly healthier than the traditional version. It’s not even that I want to eat a whole bunch of baked goods, I just love the process of baking- a little taste is all I need. Hopefully I can stick to my plan but I’m not making any promises to myself ;)
