Raw Zucchini Pasta

I finally got a spiralizer!! If you don’t know what a spiralizer is, it’s basically a little kitchen appliance that allows you to turn vegetables and fruits into skinny spaghetti-style “noodles” or flat fettucine-style “pasta”. A spiralizer is a fantastic tool for people that are getting into raw foods. Imagine making whatever you please into a pasta dish. Zucchini is a great place to start because it’s soft, and neutrally flavoured. You can add a pesto sauce, a tomato sauce, or even a vegan alfredo sauce. I’ve stuck with the basics here for my first spiralized dish.

Raw Zucchini Pasta with Raw Tomato Sauce

Your favourite basic spaghetti recipe turned into a tasty raw version. Simple, healthy, delicious! I used both yellow and green zucchini for an extra special appearance.
Ingredients:
Pasta: –

  • Zucchini – 2 medium-sized, spiralized

Sauce: –

  • Tomatoes – 1 1/2 cups, chopped
  • Extra Virgin Olive Oil – 1/4 cup
  • Sun-Dried Tomatoes – 3
  • Red Bell Pepper – 1/4 cup, chopped
  • Cashews – 1/4 cup
  • Garlic – 1 clove
  • Date – 1, pitted
  • Apple Cider Vinegar – 1 tsp
  • Fresh Basil – 1/4 cup, loosely packed
  • Fresh Thyme – 1 Tbsp
  • Sea Salt – To taste
  • Fresh ground black pepper – To taste

Instructions:
Spiralize zucchini into noodles and set aside.
Add all ingredients for sauce into blender and blend until smooth.

    I just found your site through the Food Blogs email and you reminded me that I have one of these spiralizers, too. I got it a few years back when I got my raw foods certification, but never pursued eating this way. Now, some health issues are prompting me to cleanse and fast and I’m so glad i found your blog.   • I love this raw vegan dish, it looks wonderful. So glad that I found your site, I cook a lot of my food by occassionally try going raw. A dehydrator would help, I need one of those, It just doesn’t work in the oven.

  • Hi Kelsey! I got my spiralizer at a kitchen store in Vancouver…just an independant one, not a big name store. It was about $28, although some went up into the hundreds!! It’s very basic, it’s “Kitchen Basics Prep” brand, “Spiral Slicer”. This isn’t the one, but it looks pretty much identical: http://www.amazon.com/Joyce-Chen-51-0662-Saladacco-Spiral/dp/B0000DDVYE

  • Hi Josephine! I think you would be fine making it the night before. The sauce will last a few days in the fridge. Just keep the sauce and zucchini seperate from eachother. The thing you need to be able to do, is drain the zucchini. As it sits, a ton of water leaks out from it, so as long as you can drain it off, or squeeze it out, you should be good to go! I had the zucchini in the fridge for probably 2 1/2 days.
