Roasted Butternut Squash in Yellow Coconut Curry Sauce

One of my all-time favourite foods is butternut squash. I love it simply roasted in olive oil with some pepper and lots of sea salt! I got through a lot of squash throughout the fall and winter. While attending a local summer market that is held every couple of weeks, I found a vendor selling delicious thai sauces. Man, was he ever generous with the samples!!! Homemade Granola Bars and Cookbook of the Month- September

I happen to love granola. I could probably eat it everyday without getting sick of it- with yogurt, almond milk, crumbly, or in bar form…. Unfortunately, almost all granola in stores is loaded with sugar and/or various kinds of corn syrup and even ingredients I cannot pronounce.
