			<content:encoded><![CDATA[<p>You wouldn&#8217;t believe the amount of things I had to take home from pastry class this week! We had so much food! The long-awaited truffle torte finally came home, along with apple turnovers and meat pies made with homemade puff dough. We also brought savoury croissants- ham &amp; cheese and plain cheese. We made a charlotte russe which is a white cake, lined with homemade lady fingers and a gelatin mousse filling (I used a black currant/raspberry flavour). We also made creme brulee, and for some reason ours tasted like Mcdonalds vanilla ice cream! Can you imagine me standing on the train during rush hour trying to carry all of this and balance- whew! Not to mention the looks I was getting from other passengers&#8230;.I could tell they wanted my cake <img src='http://kokoskitchen.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> </p>

<p>I fell in love with the flavour of goat&#8217;s cheese after being introduced to it in a salad. I started adding it to my own salads, my favourite one being a spinach salad with reduced balsamic vinegar, slivered almonds, figs, and of course goat cheese.</p>
<p>After being tested by my naturopath, it was confirmed that I have a sensitivity to cow&#8217;s products (no surprise to me). But I had no complaints- I now enjoy goat&#8217;s cheese on my pizza and anywhere else I need that creamy texture with a distinctive bite! Soon I&#8217;ll be trying goat&#8217;s milk and goat&#8217;s yogurt and I&#8217;m quite excited! Have any of you tried them? What did you think?</p>
<p>Goat cheese is a lot easier on the stomach than cow&#8217;s cheese, but I cheated a bit and mixed it with cream cheese sprinkled with salt + pepper, spiked the mixture with a couple tablespoons of Creme de Cassis, slathered it over a fresh, chopped date and smothered it in toasted pistachios&#8230;the result? Goat Cheese Truffles from &#8220;Dish&#8221; by Trish Magwood. And they are wonderful! They look beautiful piled up on a plate, so indulge in one&#8230;.or three. Hey, it&#8217;s not chocolate!</p>
