Goat Cheese Truffles

I fell in love with the flavour of goat’s cheese after being introduced to it in a salad. I started adding it to my own salads, my favourite one being a spinach salad with reduced balsamic vinegar, slivered almonds, figs, and of course goat cheese.

After being tested by my naturopath, it was confirmed that I have a sensitivity to cow’s products (no surprise to me). But I had no complaints- I now enjoy goat’s cheese on my pizza and anywhere else I need that creamy texture with a distinctive bite! Soon I’ll be trying goat’s milk and goat’s yogurt and I’m quite excited! Have any of you tried them? What did you think?

Goat cheese is a lot easier on the stomach than cow’s cheese, but I cheated a bit and mixed it with cream cheese sprinkled with salt + pepper, spiked the mixture with a couple tablespoons of Creme de Cassis, slathered it over a fresh, chopped date and smothered it in toasted pistachios…the result? Goat Cheese Truffles from “Dish” by Trish Magwood. And they are wonderful! They look beautiful piled up on a plate, so indulge in one….or three. Hey, it’s not chocolate!
