Sweet Potato Brownies | Koko's Kitchen Koko’s Kitchen got a makeover! I hope you all love the look of my new website as much as I do. Obviously, there may be a few kinks to sort out with this kind of thing along the way, so I’ll try my best to get everything under control as soon as possible. To celebrate, I made chocolate brownies!! I’ve been wanting to make these brownies for months now! The cafe I work at sells these absolutely amazingly rich and super tasty brownies and chocolate kumara (sweet potato) cakes by Natural Abundance. They are all grain-free, low carb, high fat, and paleo. A few of the different flavours contain eggs but there is one that is vegan. I took a look at the ingredients which consists of coconut flour, coconut oil, coconut sugar, eggs, vanilla, cacao powder and kumara (sweet potato) and I decided to make my own version of these paleo, vegan treats. Sweet Potato Brownies | Koko's Kitchen I think a diet high in healthy fats can actually be really beneficial so don’t be afraid to use the full amount of coconut oil and coconut flour in these treats. I love healthy foods full in fat like avocado, salmon, coconut oil, and raw unpasteurized butter or milk from grass-fed cows. Eating healthy fats can also help the body to burn fat! Sweet Potato Brownies | Koko's Kitchen These sweet potato brownies are really easy to throw together. Basically after you steam the sweet potato, you can stir everything together in one bowl! Another great point about these is that they’ll last foreevvvaaa due to the high amount of coconut oil in them. Store them in the fridge and they will last weeks, store them in the freezer for months! Sweet Potato Brownies | Koko's Kitchen The coconut flour I used is unlike most regular coconut flour. I used a high-fat culinary coconut flour from Natural Abundance. To me, it basically looks like very finely ground coconut and I think that you could substitute that. You can see what it looks like because that’s what I sprinkled on top in the photos. Sweet Potato Brownies (vegan)


  • Mashed Sweet Potato (Orange Flesh) – 3/4 cup
  • Chia Seeds – 2 Tbsp
  • Water – 6 Tbsp
  • Melted Coconut Oil – 1/2 Cup
  • Raw Cacao Powder – 1/2 Cup
  • Coconut Flour – 1/2 Cup
  • Coconut Sugar – 1 cup
  • Vanilla Extract – 2 tsp
  • Dark Chocolate Chips – 1/4 Cup

Preheat oven to 160 C/ 350 F.

Peel and steam a sweet potato until tender. Mash with a fork- you need 3/4 cup.

Stir together chia seeds and water and let sit 5 minutes until jelly-like.

Over a double boiler, melt coconut oil. Remove from heat. Stir in cacao powder, coconut sugar, vanilla, chia seed mixture, and mix well. Fold in coconut flour and chocolate chips without over-mixing.

Pour into a parchment-lined 8 x 8 baking pan and bake 35-45 minutes until you can insert a toothpick and it comes out clean. Let cool and place in the fridge. The coconut oil will cause the brownies to firm up so I like to under-bake these!
