Valentine's Day French Toast | Koko's Kitchen

This recipe is the ultimate plant-based breakfast-in-bed. I think this recipe is a great way to have a bit of indulgence on Valentine’s Day without relying on super processed store-bought chocolates or candies.

I used a thick-sliced whole grain bread, although I imagine most kinds of bread will work- maybe even gluten free! Let me know if you give it a try.

Basically what I have done with this recipe is used a blend of cashews, almond milk, and garbanzo (chickpea) flour to act as my egg wash. With this recipe, you can dip the bread or spread on a thin layer of the mixture, and as it cooks, a nice golden crust develops. Crispy on the outside, nice and soft on the inside!

To make this extra special, I served it with sliced strawberries, a dash of maple syrup, and a drizzle of raw chocolate sauce.

Valentine’s Day French Toast

  • 4 pieces thick-sliced bread
  • 1/4 cup raw cashews
  • 1/4 cup garbanzo (chickpea) flour
  • 1 Tbsp chia seeds
  • 2 tsp vanilla extract
  • 3 Tbsp coconut sugar
  • 1/2 cup almond milk
  • 3/4 tsp cinnamon
  • 2 Tbsp coconut oil
  • Pinch of sea salt

Combine cashews, garbanzo flour, chia seeds, vanilla, coconut sugar, almond milk, cinnamon and salt in a high speed blender, and blend until smooth. Pour mixture into a shallow dish.

In a large pan, over medium-high heat, melt a Tbsp of coconut oil. Dip 2 slices of bread into batter, or spread a thin layer of batter onto each side. The chia seeds cause the mixture to thicken over time, so spreading it on may be easier. Fry for 2-3 minutes on each side, until golden brown. Repeat with the remaining tbsp of oil and 2 pieces of bread.

Serve with sliced strawberries, warm maple syrup, and a drizzle of chocolate sauce. You can make a quick raw chocolate sauce by combining equal parts raw cacao powder, melted coconut oil, and then a slightly greater amount of maple syrup.
