A summer salad bursting with flavour, freshness and juicy watermelon goodness!
Take your 1/2 watermelon and cut around the pink flesh with the knife on a slight angle so as not to cut through the shell
Score the pink flesh in both directions, like a checkerboard with each line about 1/2 an inch apart
Scoop out your large cubes of watermelon and slice them into nice salad-sized cubes
In a large bowl, combine all of the ingredients and toss together.
Pour the salad back into the half watermelon shell and serve
** I am not big on really strong raw onion flavour so I always soak my sliced onions in water and a bit of lemon or lime juice for about 10 minutes to kill the onion-y flavour slightly.
