Watermelon, Arugula and Feta Salad – Summer Bliss!

Watermelon Salad

Hello again!

I can’t count how many times I have seen watermelon and feta salads on social media and TV. It never really seemed like my jam (despite loving watermelon and feta….) but the other day I saw a photo on Instagram and thought now is the time to try it! I cannot remember who made the one that I saw so I had to wing it. It turned out so delicious, I just had to share it with you all. It is not an exact recipe….just a casual summer dish you can throw together using amounts that suit you. I’ll lay out the basics here though.

This salad is bursting with summer flavour. It is fresh, juicy, peppery, salty, sweet and just oh-so-good. Best enjoyed while blasting Harry Styles’ song “Watermelon Sugar”.

A summer salad bursting with flavour, freshness and juicy watermelon goodness!

  • 1/2 watermelon, cubed (keep the shell whole!)
  • 1/2 block feta (roughly 100g)
  • A few handfuls arugula (roughly 75g)
  • 1/2 red onion sliced thinly*
  • A few leaves fresh mint finely chopped
  • A glug of good quality olive oil
  • A glug of good quality balsamic vinegar
  • A big pinch flaky sea salt (I actually used a balsamic sea salt)
  • A big pinch black pepper
  1. Take your 1/2 watermelon and cut around the pink flesh with the knife on a slight angle so as not to cut through the shell

  2. Score the pink flesh in both directions, like a checkerboard with each line about 1/2 an inch apart

  3. Scoop out your large cubes of watermelon and slice them into nice salad-sized cubes

  4. In a large bowl, combine all of the ingredients and toss together.

  5. Pour the salad back into the half watermelon shell and serve

Recipe Notes

** I am not big on really strong raw onion flavour so I always soak my sliced onions in water and a bit of lemon or lime juice for about 10 minutes to kill the onion-y flavour slightly.
