This weekend a took a trip to Tofino with three of my best friends. Tofino is a beautiful location on Vancouver Island with gorgeous sandy beaches, surfing, and the cutest little town. We were camping and had such an amazing time. We lucked out with the weather and spent the weekend on the beach tanning, playing badminton, frisbee, and soccer, and having campfires in the evening. It’s time to say good-bye to the drinks and snacks we may have over-indulged in, though. I’m ready for some fresh food, like these veggie & bean tacos.

For this month’s Drop Dead Recipes, I decided on veggie tacos with lots of fresh flavours from a variety of vegetables, beans, and broccoli slaw.
