Simple Honey Raisin Cake
This is a lazy day honey raisin cake – it’s simple to make, requires only a few ingredients and then you can forget about it for an hour while it bakes. Do your Sunday chores, start a movie, whatever! When it comes out of the oven, enjoy it with a nice cup of tea 🫖

A simple cake recipe for a tea time snack.
- 3/4 cup honey
- 1/2 cup butter
- 2 eggs
- 1/2 tsp vanilla extract *Can also use a pinch of vanilla bean powder
- 2 cups all purpose flour
- 1 Tbsp baking powder
- 1/2 tsp sea salt
- 1/2 cup raisins

Preheat oven to 325 F

Grease and line a 6 or 7" cake pan

Sift together flour, baking powder and salt, set aside

Cream together honey and butter until smooth

Add vanilla

Mix in eggs one at a time, alternating with sifted flour mixture, mixing until just combined after each addition.

Toss raisins in a bit of flour

Stir raisins into cake batter until just combined.

Pour batter into prepared pan

Bake for 65-75 minutes, until a toothpick inserted into cake comes out clean

Turn out on a wire rack and let cool completely

Enjoy with a drizzle of honey
