Rhubarb Syrup

Well, I promised you one last rhubarb recipe for the season and here it is. It’s a goodie…..worth the wait 😉
This is a super simple rhubarb syrup- perfect for adding to a gin & tonic, vodka & lemonade or your favourite cocktail. Or, if you’re no fun, you could just make a nice alcohol-free pink lemonade with this. The flavour is light and sweet with a subtle rhubarb taste, not to mention how beautiful their light pink colour is. Add sunshine + friends + good music for extra enjoyment!
- 4 cups Rhubarb diced
- 1 cup Organic Unrefined Sugar
- 1 cup Water
- 1.5 oz Gin
- 5 oz Tonic Water
- 1-2 tablespoons Rhubarb Syrup
- A squeeze Lime Juice
- A sprig Mint

Combine syrup ingredients in a sauce pan and bring to a boil. Reduce heat to a simmer and cook until fruit is softened, about 20 minutes. Pour mixture through a strainer. Set aside to cool.

Combine gin, tonic, rhubarb syrup, squeeze of lime juice, and sprig of mint. Enjoy!
Try replacing some of the rhubarb with strawberries for a great flavour combination!
