Carrot Cake Oatmeal with Ginger Spiced Cashew Cream

I hope you all had a great weekend! I did 🙂 I went out for a delicious Thai dinner to celebrate a friend’s birthday, and went straight from there to a fun housewarming party. I also went to “The Food Show” in Auckland. I love going to these types of events, and it reminded me of EAT! Vancouver. It’s always fun to check out the stalls and samples at food shows. It’s a great way to learn about new companies, and smaller, local companies that you might not have heard of. There were tons of vendors at The Food Show, selling everything from cheese to bread, granola bars to dumplings,…

    Ginger Energy Bites

These little bites are just what you need after doing a four-minute plank. Yes, I did FitFluential’s #FFAprilAbs challenge, which means doing a plank per day in April. If you follow me on Twitter (@kokobrill), you saw my progress. On April 1st, I started off with a 2-minute plank, and now I have worked my way up to 4 minutes and 5 seconds which is ridiculously hard. Anyone who tells you otherwise is a liar!! I once read that Ryan Gosling was so busy that to stay in shape for a movie he was in he only had time to do an 8-minute plank per day. That is insane. Anyway, my…

  • Raw Lemon Meringue Pie

    Raw Vegan Lemon Meringue Pie

So you’ve prepared your Irish Moss Gel and what now?? Well…you could make this amazing raw vegan lemon meringue pie. Just sayin’. I love this pie so much! The coconut and lemon make such a lovely combination, and the macadamia crust is so suited to the cheery lemon flavour. Once you have your ingredients, it’s very easy to throw together- hopefully you have a high powered blender, but if not, try a food processor. The nuts can get expensive, but I think this kind of pie is well suited for when you want to have a few people over for dinner and show off your raw food $killz- an occasion, or…

  • Raw Chocolate Caramel Pie

Sup ya’ll…I made a pie. It’s not a normal pie. It is a unique, nutritious, delectable pie. You will not believe what it is made out of…but try it, and you really won’t care anyway. You will just gobble it up! When I eat dessert, I really prefer a raw dessert. What I mean by that is that it will be gluten-free and dairy-free, completely vegan and free of refined sugars and flours. That way I can eat something totally decadent and even if it is high in fat or sweeteners, I can still feel good about them. I know that I’m not using any ingredients that are terrible for…

    Vegan Vampire Cupcakes

Halloween is coming up soon, and these are the perfect treats to make for your friends and family! I have created vegan vampire cupcakes, and they are a ton of fun to make. My boyfriend, Rhys, and I made this how-to video to show you guys exactly how to make these. I hope you enjoy it! * For best quality, switch video to 1080p HD   Again, if you aren’t concerned with these being vegan, feel free to replace vegan margarine with regular butter. I often bake vegan cupcakes but not-vegan frosting. I love my vegan cupcakes, they are so light and moist, but I enjoy the flavour of…

  • Baked Pumpkin Donut Holes

Is it really my first pumpkin recipe of the season!? Normally, I’m pumpkin crazy. I’m going to owe this to the fact that until yesterday, Vancouver had brilliant sunshine and record-breaking temperatures. It didn’t even feel like Fall until yesterday! Well, now it’s time to buckle down and use pumpkin until I’m sick of it- which really never happens… This is a delicious recipe for donut holes, or donut middles. I found it from Two Peas In Their Pod. I first adapted this recipe with a whole wheat pastry flour and some other small changes. When I popped it in the oven I realized I had made a fatal error….I FORGOT…
