It’s officially Summer time! I couldn’t be more excited. I just had a great weekend away in Whistler for my birthday, and followed it up this past weekend with a great Canada Day hike. I also got a new laptop for my birthday and I am sooo stoked about it. I have been using my 10+ year-old computer for all my blogging and it really turned into a hassle. Apple Chips
I’ve been very busy lately and it is way too easy to not eat for a long time, and then eat whatever is easiest/fastest to grab. We all know that that usually ends up being more processed/junky foods. My plan lately has been to make a healthy meal but with leftovers that will last for one or two more meals so I can have a quick lunch during the day. Sooo…if you follow me on Instagram or Facebook, you will know the recent tragedy and devastation that I endured, as I realized I had lost the recipe for these raw blackcurrant and lemon squares. Tropical Coconut & Passionfruit Chia Pudding
One of my favourite things about eating raw foods is that often dessert and breakfast can be the same meal! Who doesn’t want a chocolatey raw cacao and banana smoothie, or banana soft serve with fruit and coconut cream for breakfast. In this instance, I made a sweet and fruity tropical coconut & passionfruit chia pudding for breakfast; but I could easily enjoy it as a healthy, sweet dessert, too.
