Caprese Salad

I recently spent the weekend on Saltspring Island (one of my favourite gulf islands here in British Columbia, Canada). Saltspring is known for it’s self-sustaining community. For this small island, you can literally get anything you need. There are plenty of beautiful farms producing everything from fresh dairy  and vegetables to lavender and wine. Every Saturday there is a market in the heart of town that showcases all of the great products of the island. I love seeing all of the fresh organic vegetables, hand crafted jewellery and clothing, and of …

Rhubarb Spelt Scones with Rhubarb Topping

I had been debating what to do with the beautiful and GIGANTIC rhubarb growing in my garden for several weeks now. It got to the point where it had to be picked, before it turned hard and stringy. I settled on scones, because I had never made them with rhubarb before- usually I stick to sauces and such. Although I did make a rhubarb sauce to top them with! I had just found a giant bag of spelt flour (which I love!) at Costco, and took advantage of the opportunity …

Raw Caesar Salad Dressing

My garden’s lettuce box has been growing like crazy and we have an abundance of arugula, salad bowl lettuce, mesclun green, and romaine. I love love love our romaine- it’s sooo crisp and fresh and you can’t get more local than your very own backyard. I decided to make a caesar salad, because it was a perfect way to showcase this lovely lettuce. My friend was over for dinner and she couldn’t get over how good the salad tasted- she was sure it was the homegrown lettuce! This is a …

California Love

Guys, I love sushi. I could eat Japanese food every day for the rest of my life and never get bored. I’m super excited about my garden this year because I was given EDAMAME seeds to plant! These seeds are very special- it’s difficult to get edamame (soy bean) seeds that are organic, and not genetically modified and the seeds I recieved are just that- pure, and organic! I can’t plant them just yet, but I’m looking forward to the day that I can go out to my garden and …

Swiss Chard and Chickpea Salad

Long time no post! Busy times means less time for pictures- not that I haven’t been cooking or baking, but some days there just isn’t enough time to shoot and blog!
After a few days without taking a look at my garden, I went out today and was totally shocked to see how BIG my swiss chard had grown! To me, swiss chard always looks like rhubarb’s long lost brother or something….. well, anyway, I had to make a dish with it! I picked it and noticed that it came with …

Helloooooo everyone. What a wonderful day it was! I can’t get over how much I love summer and sunshine. Today my boyfriend and I went to EAT! Vancouver and thoroughly enjoyed ourselves. We gathered samples from a whole bunch of booths and munched our way through the entire event!
Several hours later though, I was hungry! I had bought some Kamut pasta at Whole Foods and I was very excited to use it. Since I am following a very specific diet to rid my body of candida, white pasta or even …
