Natural, Organic Homemade Fro-Yo

I really don’t consume that much dairy- I tend to avoid milk, eggs, cream, cream cheese, etc. But one thing I just love is yogurt. Especially frozen yogurt. I’ve been wanting to make my frozen yogurt for a long time now, and I don’t know why I haven’t before, because it’s so simple.

Happy Easter!

I hope everyone is enjoying the long weekend. I had a great dinner last night with my cousins/aunts/uncles/etc. The food was delicious, and my aunt made me some super tasty manicotti, some vegetarian gravy and some vegetarian stuffing while the rest of the family had turkey. Flowers or Cake? How About Both!

I wanted to share this with you guys because it’s super exciting for me- my first paid job! I had a friend approach me needing something as a special surprise for his girlfriend of two years (what a nice bf!). The only problem was that she ‘only likes boring vanilla cupcakes with boring vanilla icing’. He wondered if I had any ideas on how to spice this up. Holiday Baking- Vegan Pecan Pie

I’ll be the first to admit that by no means is this a “healthy” dessert. It contains a ton of sugar, but I wanted to make a pecan pie that didn’t contain a ton of butter, or any corn syrup. Unfortunately for my mom and I, pecan pie is probably our favourite pie!

Brownies- Vegan and You'd Never Know It

These are from the cookbook of the month- Rebar. They are vegan brownies and they are oh-so-delicious. Decadent and cakey, no one would ever know that they are vegan. My boyfriend (who constantly reminds me of how much I am missing out on by not eating meat, or drinking milk, etc.) loved these! Creepcakes!

Wow, November already!? This year is flying by…I already have my midterms for cooking school this week and have yet to practice or study. I guess that’s my task for tomorrow!

New England Clam Chowder

Hello everyone! It’s been a little while since my last post and at last….something NOT pumpkin! After making a New England style clam chowder in my cooking class, I wanted to try to make MY version at home so I could actually taste it- sans pork, and chicken stock. I used vegetable stock with a bit of fish sauce mixed in because I could not find fish stock. Bonjourrrrrr my friends! It’s a long weekend and I actually get the day off…I have made some super exciting plans to go shopping with my mother tomorrow, not only for clothing, but to the BRAND NEW WHOLE FOODS STORE IN VANCOUVER!!! I was ecstatic to hear that we have a Whole Foods now after reading blogger after blogger posting about their purchases from Whole Foods. I hope it can live up to my expectations! Dark Chocolate-White Chocolate-Butterscotch Cookies

These were soft and chewy, melt in your mouth cookies! I adapted the recipe from Anna Olsen’s chocolate chip cookies. Perfect with a glass of milk!
Ingredients:
3/4 cup unsalted butter, softened
1 cup brown sugar
1/4 cup granulated sugar
1 egg
2 tsp vanilla extract
2 cups all purpose flour
2 tsp cornstarch
1 tsp baking soda
1/2 tsp salt
8 oz combination of bittersweet chocolate cut into chunks, white chocolate cut into chunks, and butterscotch chips
Directions:
Preheat oven to 350 F.
Cream together butter and sugars until smooth. Add egg and vanilla and blend in.

Baked Lemon Cheesecake

For my dad’s birthday this year, I decided to try something new- instead of a traditional birthday cake, I made a Baked Lemon Cheesecake. The cheesecake was different, in that there was no sour cream or cream cheese in the recipe. The “cheese” part came from ricotta and greek-style yogurt. The finished product was wonderful and actually ended up tasting like a lemon meringue pie! My family loved it, and I’m sure your family will too- recipe coming soon!
