Rhubarb and Honest Scrap

When my aunt offered me some rhubarb from her garden, I was more than happy to have some!! She gave me a huuuge bag full of amazingly colourful rhubarb. I looked for a few recipes to test out but was tired of the oh-so-typical “Strawberry-Rhubarb Pie/Jam/Compote/Crumble/etc.” so I went to my favourite pastry chef- Anna Olsen. I had made this recipe for her Rhubarb Cream Tart once before but I am easily restless and slightly impatient so when recipes call for “cooling completely” or “chilling for two hours”, there tends to be a bit of a problem- hence why this dessert tasted great but looked like crap the last time I made it.

This time would be different though! I am older….wiser…I need for my desserts to look nice for this blog! So I took my time, I waited while things cooled, I chilled it for MORE than two hours, and it was worth it. I’m not supposed to be eating anything sugary so I had a teeny bite of this and let me tell you…ONE TINY BITE IS NOT ENOUGH! This is absolutely sublime! It’s sweet, tender rhubarb on top of a slightly lemony mascarpone mixture over a graham crust and it is to die for. It is so refreshing as these days get warmer and I strongly encourage you to make this for any summer gathering!

On another note, I was so excited when I was on my routine visit to Sophie’s Foodie Files and discovered that she had awarded me the Honest Scrap award! Basically this means that I tell you 10 things about myself and pass it on to others to learn about them! So without further ado, 10 things about me:

1. I’m studying to become a holistic nutritionist, and I am beginning cooking school at the end of September

2. I LOVE animals. I spent most of my life with the goal of becoming a veterinarian. Right now I have a dog and a bird whom I love to death!

3. My favourite band is Blink-182 and I have a tattoo of their logo on my wrist.

4. I LOVE travelling and I can’t wait to go back to Italy and Greece and Thailand and explore the rest of the world, too!

5. One of my favourite things to do is excercise- I enjoy running, yoga, swimming, strength-training and tennis.

6. My favourite colour is yellow because it is the happiest colour there is!

7. I love aliens and conspiracy theories.

8. I don’t like elevators, being chased, heights, certain shaped cutlery, or my food touching on my plate.

9. I like cookie dough more than the baked cookies.

10. One day, I plan on having my own show on The Food Network. DREAM BIG!!!!!
