The Extreme Bean Caesar Inspired Chili
Beans! Beans! Beans!
This month I was so excited to receive an awesome package of treats from Matt & Steve’s The Extreme Bean. This is a really cool Canadian company that makes flavoured beans, asparagus, olives and other beverage-related goods with nothing artifical involved! I enjoyed every flavour of their beans and olives from hot and spicy, to garlic and dill, and sweet & savoury
. Of course my first instinct was to make a delicious Caesar using these products but then I decided to get a little more creative. Why not a Caesar-inspired meal or appetizer!? Chili is the perfect winter comfort food and whether you enjoy this recipe in a bowl, or as appetizer bites, Matt & Steve’s Extreme Beans will not disappoint. I realize Caesar’s are not plant-based beverages due to the clamato juice and Worcestershire but they are something I still enjoy having every once in awhile. I’ve used a vegan Worcestershire in the recipe, and of course you can substitute tomato or clamato.
It may look like a long list of ingredients, but this recipe couldn’t be more simple- just throw everything in a pot and let it simmer away!
Caesar Chili Bites
- 1 Tbsp olive oil
- 1.5 cups white onion, diced
- 3 cloves garlic, minced
- 1/4 cup jalapeno, diced
- 1 cup red bell pepper, diced
- 1 cup celery, diced
- 1 cup carrot, diced
- 2 tsp Tabasco
- zest and juice of 1 lime
- 1 tsp chili powder
- 1 tsp celery salt
- 1 tsp cumin
- 1/2 tsp salt
- freshly ground black pepper, to taste
- 2 Tbsp Worcestershire*
- 1/4 cup vodka
- 10-20 drops liquid smoke
- 1/2 cup Matt & Steve’s Extreme Bean Hot ‘n’ Spicy beans, diced
- 1 x 540ml can black beans, drained and rinsed
- 1 x 398ml can pinto beans, drained and rinsed
- 1 x 796ml can red kidney beans, drained and rinsed
- 1 x 796ml can diced tomatoes
- 2 cups clamato juice**
- 1 bag ‘scoops’ style tortilla chips
- avocado, green onion, cilantro, Extreme Bean ‘hot ‘n’ spicy’ beans, to garnish
In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook, stirring frequently until translucent (a couple of minutes).
Add the jalapeno, red pepper, celery, and carrots, and cooking a couple minutes more until tender.
Add the Tabasco, lime zest and juice, spices, liquid smoke, worcestershire, vodka, Extreme Beans, Clamato juice and canned beans and tomatoes.
Bring to a boil. Reduce heat and let simmer for one hour until liquid has reduced, stirring occasionally. If using as regular chili, you may only want to reduce for about 45 minutes. If using as chili bites, it’s better to let reduce for an hour, as less liquid is better suited for the tortilla chip ‘bowls’.
Spoon filling into tortilla chip scoops and garnish with avocado, green onion, cilantro and of course Extreme Beans!
*I used Wizard’s brand vegan worcestershire sauce
**If you would like to keep this recipe vegan, you can use tomato juice instead of clamato juice
