Tofu Scramble
Sometimes… you’ve just got to have breakfast for dinner! “Breakfast for dinner” is a super fun dinner party theme! The PJs are a must (for the food coma to come) ๐ดย This is an easy tofu scramble recipe for any time of day and it’s sure to please vegans, vegetarians and omnivores alike. You can switch up the spices and herbs but I always leave the turmeric in for that nice yellow colour.

Pumpkin Seed Pesto Zoodles
I would like to preface this post by saying that while I love zucchini…I currently have so much of it in my fridge that I cannot possibly accept any more “gifts” from family members and friends hoping to pawn off their surplus of garden zucchini on me. Anyone who has ever grown zucchini knows how it is- haha! One of the ways that I like to use zucchini is to spiralize it into noodles a.k.a. “zoodles”! Zoodles are a great gluten-free alternative to pasta but they can also be used as a base for a variety of other dishes. I love to use zoodles in stir-frys, soups or instead of…

7 Layer Dip
It’s officially Summer time! I couldn’t be more excited. I just had a great weekend away in Whistler for my birthday, and followed it up this past weekend with a great Canada Day hike. I also got a new laptop for my birthday and I am sooo stoked about it. I have been using my 10+ year-old computer for all my blogging and it really turned into a hassle. Everything was so slow to load and apps like Instagram weren’t supported. I can’t wait to get back to blogging regularly with my new MacBook – woohooooo! It’s already been a busy Summer but there is lots more to come. One…

It was so eye-opening to see how Chef Michael approaches recipe writing for his cookbooks, and I hope I can translate some of his super skillz into my…

Drop Dead Recipes – Buddha Bowls
I’m sure you’ve all seen “Buddha Bowls” floating around Instagram and Facebook. They are a super trendy food right now, but it’s great because they are so delicious and super healthy. I’ve created this Winter Buddha Bowl full of roasted vegetables, quinoa, and a freakin’ insane miso gravy. Obviously you can substitute whatever veggies you like the most, and if you aren’t into quinoa, white or brown rice would work great, too. Winter Buddha Bowl 200g yam, sliced 1/2″ thick 200g beet, sliced 1/2″ thick 125g carrot, sliced 1/2″ thick 125g broccoli, chopped into florets 1/2 tsp sea salt 1 tbsp coconut oil 1 tbsp sesame seeds Preheat oven to…

Apple Chips
I’ve been very busy lately and it is way too easy to not eat for a long time, and then eat whatever is easiest/fastest to grab. We all know that that usually ends up being more processed/junky foods. My plan lately has been to make a healthy meal but with leftovers that will last for one or two more meals so I can have a quick lunch during the day. Keeping healthy snacks on hand is also great, so I don’t look up from work and realize I haven’t eaten in hours! These apple chips are a great little snack to have and very easy to make. I have kept…

Heritage Hotel- Vegan Tapas- Auckland, NZ
This post is long overdue, but better late than never! While in Auckland, I had the pleasure of dining at the lobby bar of the Heritage Hotel, where they served a stunning array of vegan tapas. As if that wasn’t exciting enough for me, I got to enjoy those vegan tapas with the amazing Rika + Doni of vegan miam. it was so cool to be able to meet up with them as they spent a few days in Auckland. I have been following their travels and recipes through vegan miam for quite awhile, and they are just as awesome as you would imagine!! Hope we can meet up again…

Drop Dead Recipes- Caramel Apples – No Corn Syrup!!
It’s October! I bet you all are well into Fall in the Northern Hemisphere- pumpkin spice, leaves on the ground, Halloween not too far away and of course, Canadian Thanksgiving. Well I’m in the midst of a month-long road trip to the South Island of New Zealand! Rhys and I will be doing a 4-day hike, and taking part in all the adventure that Queenstown has to offer. We will be visiting Christchurch, doing some whale watching and so much more! It happens that we will be travelling in the van on October 31st…so I think for the first year ever, I won’t be dressing up. I LOVE dressing…

Carrot Cake Oatmeal with Ginger Spiced Cashew Cream
I hope you all had a great weekend! I did ๐ I went out for a delicious Thai dinner to celebrate a friend’s birthday, and went straight from there to a fun housewarming party. I also went to “The Food Show” in Auckland. I love going to these types of events, and it reminded me of EAT! Vancouver. It’s always fun to check out the stalls and samples at food shows. It’s a great way to learn about new companies, and smaller, local companies that you might not have heard of. There were tons of vendors at The Food Show, selling everything from cheese to bread, granola bars to dumplings,…

Fermentation
Are you familiar with fermented foods? Your great grandmothers would know all about them. Fermenting foods seems to be almost a lost art, which is so sad! I’m excited to say though that there has been a huge resurgence lately in these old school cooking, and preserving methods. Several weeks ago I made sauerkraut at home and I was shocked at how easy it was. I had been debating buying a bottle of probiotic pills, but fermented foods have the exact same effect for a much smaller price tag. Eating just a tablespoon of fermented foods a day gives you the equivalent ‘good bacteria’ for you guts, as an entire…
